Our Story
Allow me to share with you my personal journey, my story. A story of transformation, of facing adversities, and of finding my purpose through a return to the roots - both literal and figurative. My name is Leo Calligaro, and I am not only your farmer but also a fellow companion on the path to health and well-being.
Agriculture is in my blood. It has been the backbone of my family's story, the heartbeat of our history. My father's parents, hardy and vibrant into their late 90s, cultivated their sustenance from their homestead, traversing the land on bicycles as free as the wind. My childhood memories are ripe with the scent of fresh earth, the satisfaction of planting seeds, and the joy of watching them grow.
When I moved to the United States from Venezuela, I brought that passion with me. I dove headlong into farming, first nurturing a hydroponic tomato farm and then nurturing a small cattle ranch.
However, as time passed, my relationship with food shifted. I started adopting the American fast-food culture and gradually strayed from my clean eating habits. Then, two decades later, I was blindsided by a diagnosis: diabetes. I was told it was a one-way street - a progressively worsening condition that would eventually need a daily regimen of medications, including insulin.
Each doctor's visit was like another punch to the gut. My triglycerides, my A1C, everything was skyrocketing. In May 2020, my doctor considered moving me onto insulin. That moment was like staring into an abyss. My mother had been insulin-dependent, and I had seen the toll it took on her. I was determined not to follow the same path.
And so, I embarked on a quest. A quest for knowledge, a quest for health, a quest for control. I was drawn towards a program by Gabriel Cousens, promising a cure for diabetes. But, it came with a steep price tag and an uncertain start date. In that delay, I stumbled upon a different path. A book - “The Complete Guide to Fasting” by Dr. Jason Fung became my lifeline. He spoke about healing your body through fasting and low carbohydrate diets.
I revisited the Paleo diet, an approach previously recommended by Dr. Ludwig Johnson but abandoned due to unsatisfactory results. This time, I discovered the teachings of Dr. Boz on YouTube and was convinced that this was my path to reclaim my health.
Just 90 days into this journey, my health began a radical transformation. My triglycerides fell to 99 mg/dL, my glucose normalized at 89 mg/dL, and my A1C stabilized at 5.2. This wasn't a miracle but a result of a dramatic lifestyle change. I embraced a primarily carnivore diet, eating one meal a day, and incorporated regular fasting. I felt rejuvenated, healthier than I'd been in a quarter of a century. Over time, I lost 110lbs and several pant sizes, and most importantly, I no longer needed any medication.
A forgotten wisdom from my grandmother rang true again, "Eat food as nature intends, not as we humans modify it." The bitter truth was clear - the Food and Pharmaceutical industries were profiting from our suffering. I decided to take control of my plate and grow my food.
And thus, Our Ancestors' Foods came to life. It wasn't just about growing food for my family; it was about creating a community that seeks to nourish their bodies with clean, unprocessed food, a tribe that values health above all else.
