How To Render Tallow

How to Render Lard

  1. Cut the fat into small pieces

    Smaller pieces render more evenly and efficiently. Slightly freezing the fat first makes it easier to cut.
  2. Place the fat in a heavy pot or slow cooker

    Add a small amount of water (about ¼ cup) to prevent scorching during the first stage of melting.
  3. Render on low heat

    Allow the fat to slowly melt. Stir occasionally and keep the heat low to avoid burning.
  4. Strain the melted lard

    Once most of the fat has melted and the remaining pieces turn golden and crispy, strain the liquid through a fine mesh strainer or cheesecloth into clean jars.
  5. Cool and store

    Allow the lard to cool and solidify. Store in the refrigerator for long-term freshness or freeze for extended storage.

The crispy bits left behind are called cracklings and can be salted and eaten as a snack or added to dishes for extra flavor.

Our pork lard comes from pasture-raised Berkshire and Duroc pigs raised outdoors on our Florida pastures. These heritage breeds are known for their rich flavor and natural marbling, producing fat that renders into clean, smooth lard perfect for traditional cooking.

Before industrial seed oils, kitchens relied on animal fats like lard and tallow for frying, baking, and everyday cooking. Properly rendered lard has a mild flavor, a high smoke point, and produces incredibly flaky pastries and crispy fried foods.

Whether you are making homemade biscuits, frying potatoes, or returning to traditional cooking fats, pork lard is a versatile staple for any ancestral kitchen.
