How To Render Tallow

How to Render

  1. Thaw slightly.
  2. Chop finely or grind for faster, more even rendering.
  3. Place in a heavy pot or slow cooker on low heat. Do not rush it.
  4. Allow the fat to melt slowly. Stir occasionally.
  5. Once fully rendered, strain through a fine mesh strainer or cheesecloth into a clean jar.

This renders into a smooth, neutral, high-smoke-point tallow perfect for frying, roasting, baking, and traditional recipes.

Because we include some trim fat along with kidney suet, you may notice small browned bits of meat as it renders. This is completely normal.

Those crispy bits are called cracklings.

You can:

  • Salt them and eat them as a snack
  • Add them to scrambled eggs
  • Mix into ground beef
  • Toss into salads for texture
  • Use them as a high-value treat for dogs

Nothing goes to waste.

Rendered tallow can last for months in the refrigerator and even longer when stored properly in a cool, dark place.

Real ancestral fat. The way it was meant to be. Grass-fed ground beef suet has a distinctive, rich flavor that is similar to butter or other animal fats. It adds a depth of meaty flavor to dishes that other vegetable oils and types of fat cannot achieve. 

This nutrient-dense fat with a clean flavor profile renders into beautiful, shelf-stable tallow. If you’ve been trying to eliminate processed oils from your kitchen, this is the most traditional replacement available.

Our Ancestral Beef Suet is the pure, hard fat from around the organs of our 100% grass-fed and grass-finished cattle, raised on open pasture here in Florida without antibiotics or added hormones.
